You need a pound of each color bean and 1 medium onion (it can be any color but red is pretty!) Cut and boil the beans until their color brightens and the texture is still a tiny bit crunchy, 5-8 minutes maybe? Do a bite test in there. Then drain and rinse under cold water to stop them from cooking past your happy place!
You can halve and slice your onion while they cool down, and then make the dressing.
Dissolve 1/3c sugar and 1/2t salt into 2/3c white vinegar. Then add 1/2t celery seed and 1/2t pepper. Whisk in 1/3c olive oil and pour it over the beans and onions!
