Sweet and Sour Red Cabbage

Slice up a small red cabbage into shreds, about 2 pounds or even a little more! Put that in a big pan with a half stick of butter and stir it around on medium heat, then add one big peeled and shredded beet and a peeled and shredded apple, or two if they're small! Add a little more butter if the pan seems dry, then stir in 1/3c each water and vinegar. Put in a tablespoon of sugar and a teaspoon of salt, and 1/4c of jelly! Red jellies work really well, currant jelly is the tradition. I used corn cob jelly because that's what I have! Now cover your pan on low for 30 to 45 minutes, it's almost impossible to over cook this! Eat it hot and enjoy this for your very own Oktoberfest!
