Cut the leaves off the stems, chop the leaves and put those in a salad spinner. Let the leaves soak while you chop the stems. Once you have a beautiful pile of stems, drain and spin out your leaves. And slice up an onion too, probably half if it's one of my huge onions!
Heat some oil in a pan and add your onions and rainbow stems, sprinkle with salt and pepper, and sautee for awhile. Like 10 mins. Then you can add your leaves and a splash of white vinegar to the pan, and cover to let the leaves steam for just a couple minutes. I had to do this part in batches bc my pan wasn't big enough, so maybe use your big soup pot to make this recipe.
When everything's looking cooked and the leaves are wilted, add a clove of grated garlic and stir it around for a minute. Taste it for S&P, and now you can eat it!
Orrrrrrr put it in the fridge and eat it cold!!! I had it for breakfast next to my egg sandwich, nommmmmm
