This looks like your average coleslaw, but don't be fooled! It has a pleasantly spicy kick balanced out with pure maple syrup! Start by slicing up half of a cabbage, shred in some carrots until you think it's pretty, and thinly slice half a red onion. Mix it up in a big bowl with a teaspoon of kosher salt and a half teaspoon freshly ground black pepper. Now it's time to make the dressing!! In a medium-ish bowl, whisk 3T juice from a jar of pickled jalapeños, 2T maple syrup, 2T each white vinegar and apple cider vinegar, 1/4c olive oil, and 1/2c mayo. Then pour that into your big bowl of veg, and ta-da! Super special slaw!
Edit! Add a heaping handful of chopped cilantro and you're ready for fish tacos!!
