Whenever the grill is going in mid summer, I always slice up some zucchini to throw on!! This recipe takes regular old grilled zucchini slices to the next level! So start by slicing your zucchini thick, like a half inch. I usually use 2 or 3 zucch depending on how many eaters they are! Coat both sizes with oil and sprinkle with salt, set aside till you're ready to cookl!
Next get a vinaigrette ready to dress your veg with after it's all grilled up! Juice and zest one lemon, add 1/2t kosher salt and 1T oil. And now for the second dressing! 😆 Put a cup of sour cream in a bowl, grate in one huge clove of garlic, 2T chopped fresh dill, and 1t kosher salt.
Finally! Grill your zucchini, put it on a platter, drizzle it with the lemon vinaigrette, and serve it with a dollop of the sour cream! Let it cool a little bit before eating, this is the special-est! Take any leftover sour cream mixture and add a little mayo, now you have yourself some veggie dip!!
