I'm channeling summer lately in super salad mode! This one is going on repeat! Chop 4 cucumbers, a red onion, one sweet bell pepper in your favorite color, and a pint of cherry tomatoes. Pour in a can of garbanzo beans. Grate 2 cloves of garlic and drizzle it all with 3T of red wine vinegar. Mix it around while adding 1T dried oregano and 2T fresh basil! Plus1/4t salt and 1/2t fresh cracked pepper. Once the colors look evenly distributed, add 2T grapeseed or olive oil and stir in 3oz feta. I made this 2 days in a row cuz there were no leftovers for the next day!!
