Set out an 8oz block of cream cheese so it gets to room temp. Sautee 2 chopped red onions (i mean, you can use any onion you have really) and the stemmy parts of a garlic chive bunch (chopped small), in oil or butter until soft and starting to brown. 10ish minutes. Add a clove of minced garlic, half tsp thyme, and a bag of freshhh spinach sliced up! Season with salt and pepper, wilt the spinach down, add 1 tsp brown sugar, mix it around and taste it for yumminess! Thennn put this in a big bowl and add the cream cheese and mix. It. Up. Now... Add a splash or 2 of soy sauce and half a can of waterchestnuts. Ur gonna have to mince them up even if you buy the diced ones. You want em small! Mix that in and Also a 16 oz container of sour cream (sorry this really is the opposite of healthy) and dip it with some sourdough!!
Nommmmmm! And if you have leftovers, make a grilled cheese sandwich with bacon and spinach dip!
