Creamy Celery Soup

OMG. There is nothing like FRESH CELERY!!! Feature it in a soup and you'll see why :)


Chop a bunch of celery and an onion, sautee that up in 4Tbsp of butter! Sprinkle with some salt and let it wilt down, but don't brown it. Get it all soft melty! Once everything is kinda translucent, mix in 2-4 cloves of minced garlic for a minute. Then all you do is stir in 4Tbsp of flour to thicken it up into a roux, add 4 cups of chicken stock (addmore if it seems too thick, or just add water instead of opening another container of broth) and 1/4c cream or 1/2 cup milk. And that is your soup! Salt and pepper to taste and you can eat this straight up, or use it in your fav recipes that call for creamed soup!
