Tips for buying your corned beef brisket! A 3lb brisket will be enough to make dinner for 4 people AND have enough leftovers so that everyone can eat a Rueben the next day! So if you're feeding a crowd, get the big 5+ pounder. I do this in a crock pot... put your brisket in the bottom, I discard most of the juices except whatever falls in, I just call it fate. Pour in water until it's halfway up the meat and add the spice packet that came with it! Cook on low for awhile- 3lb will take about 6 hours, 5lb = 8 hours. When time is up, take it out of the crockpot and keep it covered. Now turn your cooker to high heat! Add potatoes and carrots, cut how you like. Cook for 10 minutes and then add your cabbage on top for 20-30 more minutes. Now when preparing your cabbage, leave the core in, and cut it into wedges right through the core so it stays together in one beautiful chunk. When everything is ready to eat, slice the meat against the grain and EAT!!
