Chicken Pot Pie

Here's a homemade dinner you can make as easy or hard as you want! Step one, make a pie crust and chill it for a few hours, or get a pre-made one from the store! Step two, procure some cooked chicken. Leftovers are great, cooked any way is fine! Even a rotisserie chicken from the store!! Chop up the meat till you have about 3 cups. Then chop up some vegetables or use frozen, but NOT canned!!! My favs for this dish are corn, peas, diced carrots, diced potatoes. Green beans are good too and for a different spin you could do broccoli and cauliflower! Use whatever you have! You need like 3-4 cups total of veggies. Non-negotiable, a chopped onion and at least 2 cloves of grated or minced garlic.


Melt 5T butter, sautee the onion and carrot and potato if using. Cook till they soften, maybe 10 min. Add garlic for a minute, then sprinkle in 1/2c flour. Slowly add 4c chicken broth while whisking until the sauce is smooth. Season with salt and pepper, and pour into a buttered casserole that your pie crust will fit on top of. Roll out your crust, lay out on top, and poke some holes in it. Bake at 375 for 45-50 minutes! You can skip the whole crust thing and bake it covered with foil, then serve it with rolls or butter bread too!
