Another veggie that keeps forever especially if you have a dungeon cave basement like me??? Butternut squash! I'm trying to get my kids to like this veggie, idk whyyyyy they have been resisting me! So I tried a few new things with my squash and I finally have them on the hook!
Thing #1 I tried is serving it at room temp instead of hot, and thing #2 is mixing in raw stuff after it cooks and cools! So I roasted the squash in little cubes with oil and salt. When it's all done cooking and cooling, just mix in raw onion, raw celery, pecans and blue cheese!! Season with pepper and more salt if needed... Super success!!!
